Gelled Bone Broth Jelly

jelly upon cooling.

  1. Chill and Defat (The Pure Gelatin Separation)
Pour the concentrated broth into clean glass quart mason jars or a 9×13-inch glass baking dish. Allow to cool on your counter for 1 hour, then transfer uncovered into the refrigerator to chill for 6 to 8 hours (or overnight).

The Transformation: Once thoroughly chilled, the broth will set into a firm, trembling, translucent amber block of pure gelatin jelly. A hard, solid white cap of clean tallow (beef fat) will rise and harden across the surface.
