Why remove celery strings?
First, you don’t have to remove the strings from celery. After culinary school, decades of cooking and being married to a chef, you’d think the subject would have come up before now. But removing the strings is really a matter of texture, and there are plenty of times when it simply isn’t necessary.
If the celery is headed into a cooked dish, for example, heat will soften both the stalk and its fibrous strings. Removing them is much more useful when you’re serving the celery raw and crisp, especially in dishes like chicken or Waldorf salad, where a stubborn piece of celery string can be an unwelcome interruption.
