That’s why foods such as fresh meat, poultry, seafood, many dairy products, and many prepared foods need to be kept cold.
But not every food requires refrigeration.
Some foods have naturally low moisture, high acidity, protective skins, or other characteristics that make them relatively shelf-stable.
For these foods, room-temperature storage may actually help preserve their preferred texture and flavor.
The important distinction is that “doesn’t need refrigeration” doesn’t mean “can be stored anywhere.”
A pantry food still needs appropriate conditions—usually somewhere cool, dry, clean, and away from direct sunlight or heat.
